Acorn Squash with Black Beans and Salsa

I came up with this recipe on my own, when trying to think of something healthy I would love. I am a spicy kind of girl, so this sweet/spicy recipe is just perfect!

Ingredients:
1 acorn squash, cut in half, seeds cleaned out
Black beans - I use organic, canned
Salsa - pick your own level of heat

First I bake the squash face down in a baking dish, until tender. I bake mine at 350 degrees for 45 min to one hour, depending on the size of the squash.

Once the squash is tender, I remove the flesh from the peel. Mash it up a bit, and add in some black beans. I don't usually measure, but I'd say I took the flesh from one half of the squash, and mixed in about a 1/3 of a can of beans.

I added about 1/2 cup of Salsa on top. Mix it all up, and enjoy...
High fiber and you get little mouthfuls of sweet and spicy goodness!

I really like this, but you can experiment with different spices... a great lunch for sure!
